The problem with Mandalorians in this game is that we have the non-canon definition, which was a nomadic collection of individuals of virtually every race who believed in a specific creed and code; and the canon definition which is of course an actual race as seen in TCW.

Since this game is non-canon and as a result is allowed to and does use non-canon material, there's no reason why we couldn't see EU Mandalorians as well.
