So could you swap dooku for sith assassin so she can feed your team turn meter or would dooku's speed be better for getting sith troopers taunt up???

I'm running Rex lead, baze, gk, boba, nihilus. https://swgoh.gg/u/mozza/ It works really well: double taunt, double cleanse, tenacity up, retribution, ability block and massive one shots from boba and nihilus. It's enough to give any team a hard time when attacking it, and can beat anything on offence (from my experience so far anyway).

I'm running EP(l), Vader, Zylo, B2 and Nihilus. Once my Dooku and Maul get up to speed, I will move Nihilus to lead and remove Vader and EP.
