I beat the Interceptor PG with a Thrawn lead Empire team. Thrawn R6, EP R7, Piett R8, Royal Guard R4 and Gideon R5.

Gideon uses Armour Shred on Reva, Thrawn uses Facture on Reva. You can then attack Grand Inquisitor and then the other Inquisitors. Make sure to use the Thrawn given ability Maneuver whenever possible to clear the debuffs.
