In Canon, the Rebel cell Pheonix Squadron stole a TIE Fighter which had been piloted by the Imperial Baron Valen Rudor and was then used to attack an Imperial Transport carrying prisoners in order of freeing them. Later, the Mandalorian Sabine Wren painted the TIE giving it a more distinct and colorful look.
Current characters in the game who could pilot it are either Captain Rex or Ahsoka Tano (Fulcrum).
Not in the show, but the X-Wing Miniature for the ship show both Rex and Ahsoka also piloting it at one point.
Also, we have Iden Versio in Galaxy of Heroes piloting a TIE Defender despite never seen in one in any other media.
