I'll use Empire Strikes Back as an example - Luke is on his way to Bespin and the Empire needs to get there first. Vader puts a contract out for a group of empire or bounty hunters to go there first, and fortify Bespin before the empire gets there.
Boba Fett is transporting Han Solo to Jabba the Hutt - he needs back-up. Help Boba fight his way across the galaxy to deliver Han to Jabba...
It doesn't need to be something in-between an actual event in the movies, just an idea.
