I think the issue here is the 'definition' of Jedi. If we account for what the Jedi Order was, and it's 'status' at the time of ROTJ then we can say Luke by definition is not a Jedi because there's many things that he doesn't go through - like I put somewhere in this thread before, he doesn't go through the knighting, all the trials, and there's no council admitting him to the Order (or denying him).
If we go with common sense and we leave the die-hard fandom aside, let's just say that the title of the movie itself gives it away...Luke becomes a full-fledged Jedi Knight after his encounter with Vader. The Jedi, who ceased to exist, have now returned because of Luke. Thus, we can lazily define a Jedi as someone who is a strong force-sensitive being (using the light side).
