So, I have a newer alt account on my phone (iPhone) that is connected to GameCenter. If I try and connect my old iPad account to GC, will I lose my alt account?

you can create multiple Game Center Accounts to keep both accounts.

You can not save two accounts on the same GC Account. You have to create another GC Account and connect your old SWGoH account to it.
If you connect your current Apple-ID to your new device and download SWGoH you will see that your device will automatically download the process of your newer alt account.
But If you have started your main account on an Apple device, usually it connects your account to GC immediately. Are you sure that your old/main account is not connected to GC (or Google Play if you have started on an Android device)?

I CAN'T STAND GAMECENTER....so I made sure to not connect to it. And, I'm not using anything from Google. I can stand Google even less than I like Apple's Game Center.

Ok. In this case you have no option to connect your old account from your iPad to GC (because it is not possible to delete the progress of one account as far as I am aware). This also means that you can’t overwrite your newer alt account with your old account.
Creation of another GC account:
You don’t have to create another Apple-ID as it is possible to have multiple GC accounts in one ID.
1. Go to your new device (directly to your GC account)
2. Select "create new account" on the new device (If you've already signed up on Game Center you have to Sign Out of it to get the option to create a new account. (to sign out, go to the "Me" tab and click your account email)).
3. For the process of creating a new GC account you have to create a new email and personal information.
Now you should be able to connect this GC account with your old account from your iPad.
