Folks! I found the workaround! It was hidden in the patch notes:
1) Press ctrl+shift+c to open the cheat input bar
2) Type in "uintProp uiScaleFactor" followed by a space and then the number 1, 2, or 3.
The game defaults at 2. 1 is the highest resolution, and 3 is a 1280x800 resolution. You can also make the game open this "persistantly" by going to the “Graphics Rules.sgr” file. The pathing they suggest if you downloaded from EA proper is “The Sims 2 Legacy Collection\EP9\TSData\Res\Config" and they mention as a note in the note that the file location may change depending on which storefront you purchased the game from.
This is not a solution. This only changes the resolution of the UI, not the actual game itself. There is still no option to change the resolution.

Exactly. TheGoodRevBug, we already addressed how this proposed solution doesn’t actually work much earlier in this discussion.
EA_Cade , why did you mark this as solved when we already mentioned how this solution doesn’t work for many of us? I think romosim should be the one to decide that considering they are the OP. Can we please return this discussion to being unsolved?

Exactly. I unmarked it as the solution, as it is not fixing the problem for me or so many others.
