MSLADYHALL Simply uninstalling OneDrive doesn't move the location of Documents, which is why I tell people to stop syncing Documents before getting rid of OneDrive. You can reinstall it, stop syncing Documents (and Desktop and Photos), then get rid of it; or you can right-click the Documents icon and select Properties > Location, then change the location to C:\Users\your username\Documents.
Once you do that, this will be the location where you find your user content and where you add more.
You don't need to delete any of the other files or folders, and I would suggest not doing so until you've moved your data to the correct folder and confirmed that the game is reading it. But the other locations are redundant, so feel free to trash the files eventually.
