@AgentBlissy It sounds like something may have gone wrong with either this instance of the University world or the travel transition. Can you revert to a save from before your sim went back for this term? If so, please try traveling again.
If you don't have that option, please let me know whether you're willing to use mods, at least temporarily. If not, can you move your sim to a different lot within the world? I actually don't remember whether it's possible once you've already chosen a place to live. (The option would be somewhere under cell phone > Real Estate and Travel Services.) The other option would be to have your sim drop out and go home, then travel back and try again. If that particular dorm is still stuck, you could quit without saving, enroll again, and this time choose somewhere else to live.
It sounds like something about the girlfriend is bugged too, but it may not be a big deal. The versions of sims that exist in foreign-to-them worlds, for example the version of a sim from Uni that shows up in your sim's homeworld, are mini-sims, which don't have all the data associated with normal sims. So they can behave in odd ways, and they don't have all the normal options available to them, although you should be able to invite them to visit.
If you want this girlfriend to join your own sim in her homeworld, the only safe way to do that without mods is to invite the girlfriend to move in while your sim is still in the University. The full version of the sim would join your household and come back to your sim's homeworld intact.

Thanks for replying! I don’t really know how to revert the save from before she moved into Uni again. I’m also not so keen on using mods (I am more okay with using testingcheats), but I will definitely try to move her elsewhere. I also thought about unenrolling and reenrolling her, so I’ll try and do that if I can’t move her.
As for the girlfriend issue, I think what I’ll try and do is to just spam good interactions with her until I get to move her in/marry her. Thank you for the advice! 😀
