I have this too on Xbox Series X with all content. I've been trying to figure out exactly what was happening with it for a few weeks before switching to a new (non farming) household.
The eggs vanished after a few days sitting there waiting to hatch in the coop. They spoiled after so long too. I did have 2 that eventually hatched though after several days and despite being Spoiled. I started just leaving them there to see what happened but the majority of them just vanished. I saw the hen taking care of them and sitting there for days then going back to them before they just vanished.
I do hope this is fixed before I play a farming household again.
