Hi, @SimDad! You can build the house any size you want and can afford. The key is, the live-able space must be no greater than 64 tiles. If you want to start off big, great! Just make sure your Sim has no way to access the other parts of the house. No doors, archways or whatnot.
A lot of what you see in the pics are the "after" homes or homes with space that is not accessible to the Challenge Sim. For example, for my first Challenge Sim, I built a detached storage facility where she could store her art and swap out items she didn't need on a daily basis (such as her treadmill). For my second, I added a room directly on to her living space but the adjoining wall was floor-to-ceiling windows. No door. She could look but not enter.
