For story-telling purposes, I would love to be able to freeze a Sim at a career level; for example, if I want a Sim to be a nurse or a teacher and don't want them to continue up the promotion ladder ...

I'd actually like to be able to do this too, I thought it was just me lol. It would be useful especially with active careers, for example staffing the Police Department and Hospital with different ranks.
Maybe it could be a Reward Trait, sort of the opposite of Professional Slacker.
