Can’t delete occult or cause of death in CAS

There are no options to remove occult or cause of death in create a sim. Clicking on them once locks you into having an occult ghost. You can still change both, but not go back to a normal, alive sim...

I’m playing on PC with no mods

The X no longer appears when hovering over them

Is this when you take a Sim back to CAS or when you first create one ? If you take them back to CAS you'll need the fulleditmode cheat.
