How to create own Bartenders/Service Sims etc.?

I read a guide on this earlier this year but am unable to locate it.  Does anybody know the cheat commands to create your own service sims?  I remember that you have to cheat their levels up a certain amount related to their job (for example a Bartender would need high Mixology), and that's easy enough to do... but I forgot the cheats to actually assign them the jobs.  Any help?
