So I am curious, does it really matter if I chose which gender my sim will be attracted too? Because when I installed Lovestruck, my straight sims are attracted to anyone now regardless of the gender. It seems like the game will only check what your turn ons/offs are, and will not bother to check the gender of the other sims. Or am I the only experiencing this?
Make sure that you in addition to attraction to females/males also set Interested in Woohoo with only the sex you prefer.

Why does the game itself change 'romantically attraction to'? I choose one gender, and after some time, it makes both genders.
You probably have "This Sim is exploring romantically" set to Yes under the Sexual Orientation. That allows the gender preferences to change, depending on who your Sim has romantic interactions with.
