I like your list of jobs, I think it would be fun to play sims in those. I find the way the careers are made a little on the less interesting side though, and more appreciate when there are features added that makes it possible to create a player driven scenario. As an example, with the dust system I made a sim, registered them with the Ministry of Labour as a Maid, gave them the unlocked maid-outfit, and then went around to a select few of my other sim's houses and cleaned their home. Very fun!
From your list I would like to play a model, and already have plans of making Gia, all tragic and conflicted; and would wish that this could be done without hassle.
One job I would very much appreciate if added, would be retail personnel in my own sim's retails, that is, I want the pool of what sims can be hired to include more sims than it is now, and for the feature to be better managed by the player, switching, reset the pool, exclude certain sims from it etc, so that it would be easier to choose whatever sim the player made as the retail personnel. This goes for restaurant personnel as well. I don't necessarily want to play the career, just to be able to choose which sim is in it.
