Of course they're still relevant. They get early access to packs and share their opinions on it, they share news as they learn about things, they give feedback when they can. They show off assets and features so that players know what they're in for.
GCs are sims fans just like everyone else. It's not a "hate bandwagon" or anything, the game's been out for 6 years and some things are truly inexcusable. They know who their viewers are and try to amplify their voices. And just like a lot of people who feel apathetic and jaded about the game, they want it to be a good game and still have hope, but it's very easy to be disappointed after 6 years.
It's worth finding a GC that's close to your play style if you do want their opinions. Don't complain about a GC that mostly builds when they don't point out gameplay issues, stuff like that.
The problem with Let's Plays is that they need to change up the way they do it instead of just recording themselves playing for 20-30 minutes. Cut out the deadspace of nothing happening, create interesting sims with storylines, and stick to it. It's easy to let the game take control and drive you back to playing the same exact way you always dobecause the sims have no personality and all react the same way. And when everyone falls back into the same pattern, it's not interesting. I think LP youtubers are trying to do things the old way and are frustrated it's not doing as well, so they just stop instead of trying to find a way to make it work.
