Ha! This made me thinking, and my conclusion is that I must be both! :) I constantly get new ideas, but because I will never be abled to let go of the families I played through generations since 10 years, I simply keep adding new ideas and new beginnings to my old ongoing save. So, technically I stick to one save (that will follow me to my grave), but I keep start new projects and also some new family stories, especially as I tend to keep minimum 1 household from each new world added.
My game is basically a kingdom with numerous peerages, a working political system involving set regions and detailed elections, and lots of everyday commoners, of course. I must have 120 households by now, stopped counting long ago. Onto this I added systems of vampires, magicians, the Flock people and a few more, including 200 years of specific history and traditions. I constantly need to look up details in my own notes, and my online History Book has turned out to be my gold mine to keep track on stuff. I love playing his game in this way, but I've started to restrict new additions as it is about to become too much, even for me :)
