If I understand the question correctly, you want to change the each version of auditorium.
If so, then it should be like with community spaces: open up the lot info panel and there are four buttons in there: auditorium (the generic one you see every day), graduation, formal dance (proms), and career days. These buttons allow you to make changes to other auditorium types without having to wait until they appear during the gameplay.
