You are complaining that your sims are basically winning at the game of life. I wouldn't say that they are cookie cutter if they are doing well for themselves. I have noticed that many simmers tend to give their sims all the favourable traits and lot traits and aspirations for whatever story they want to tell with that sim and basically setting them up for wining. So, if you want to play sims that don't have such perfect lives, you could try add some elements that bring a bit of a challenge to their story. Unromantic workaholic sim that wants big family, clumsy sim that wants to ski or climb mountains while living in Sulani, lazy slob sim that wants huge fortune, gardening aspiration but lives in an apartment with no garden space, etc.
