They work fine but the downside is that you can't sell flour and sugar needed for the Simple Living lot trait. Those items have no physical object to set for sale. I have a store that sells all possible ingredients for herbalism and magical potions.

You don't need mods, just click on the stand and choose 'hire vendor'
If you have eco lifestyle, you can use a market place community space. Up to 3 stall will automatically spawn a vendor. Unfortunately this doesn't work for the cottage living stalls but the rest of them work. On other lots you will have to hire a vendor with a limit of max 8 vendors.
