The bodies in the category are just general archetypes, templates if you will. Once you choose one then you can push/ pull the specific features using the hand tool that appears when you hover your cursor over a specific feature. As your doing this you will see a sort of mesh like Gris light up on the feature, once it turns red you have manipulated it to its maximum ability in that direction.
Detail edit mode is great for faces. You can get really close in to manipulate lips, eyes, eyelids, eyebrows etc.
Also as you work, zoom out kinda far every so often and see how things look to you. Because in game you likely aren’t generally right on top of your sim, so this gives you a bit of perspective because a lot of things don’t look right when you’re zoomed in really close.
