I don't use color themes rigidly, but I do give each of my sims a fave color, style and material, and whenever I remember to i will use their preferences when decorating or dressing them. i normally forget about it though, as I need to look it up in my outside the game notes.
My intention was also to create some cool challenges when 2 sims with different favorites move together and need to blend. Luckily I also have a system for how important this is to each sim, and normally only one of a couple will care a lot :)
