See whether you have “Use Fresh Ingredients” checked right down the bottom.
If I’m right, you should still be able to cook the pale/faded/blanked recipies. You just wouldn’t have the fresh harvestables and it would cost more that if you did.

Alternately, I just found that when my stove burnt up, it’s become unusable and my Sim can’t cook many of the recipies. :*

Sometimes if my sims have been interrupted mid cooking, then they leave something in the oven and I cant cook anything else until the dish in the oven has been removed (by clicking continue cooking...) or if I replace the cooker. Just a possibility :)

Replace the stove and see if that helps. Eventually see if you can cook on another lot. Sounds like the stove is unavailable, or that there is no free counter etc.
