I don't usually do separate saves, but I think I may eventually add either a general medieval/fairytale save, or an Elder Scrolls-themed save.
But in my main save, I have the following families planned:
(1) A young farm family, the Fernsbys: Alice and George, and their children Beatrice, Peter, and Matilda. I'll probably evict the premade family and put them on the 64x64 farm lot with minor edits.
(2) Rose and Bernard Posey, an elder couple who will be the parents for one of my longstanding sims (she's a florist in Willow Creek). They will own a grocery/takeaway meal retail shop. I think they will live in the yellow house made by Harrie, just behind the festival competition area. It looks like maybe there's another lot just across the small square with a fountain from their house. If so, I'll make that their shop. (For the other downtown lots, I'll likely leave the pub as it is, and add a combo bakery/bookshop, eventually to be owned by one of the kids from one of the local families.)
I may go ahead and create them this weekend, so I can add them to their daughter's household to create the relationship and then move them out.)
(3) "Birdie" Nightingale, elder, a retired veterinarian, who still keeps vet equipment in her barn and lives with her YA niece Nicola Fox, who aspires to be a historical romance novelist. Birdie raised Nicola after her mom Imogen died; Imogen may or may not be included in the household in ghost form. They will live in in one of the houses in New Old Henford, TBD.
(4) A wealthy family for whom I will build or download a very fancypants manor home, to be placed on the large empty lot in NOH. Still working on their details, but the parents will be the parents of a YA sim I have living in Windenburg, who is a college student and budding archaelogist, as is her husband. So I'll be creating her parents (dad is a politician, mom is a barrister), and her younger siblings. (I'm thinking parents Archibald and Helena, siblings Charlotte and Hugh). They will also have a butler, Alfred (playable household member, not an NPC), who is an elder and will have a little romance with Birdie Nightingale.
(5) If I can play the Crumplebottoms, I'm going to have them adopt a young niece and nephew, and raise them in a haunted lot in the Bramblewoods.
(6) A spellcaster couple with two children, the Birdwhistles, who will live in the Bramblewoods, lot TBD. If there's an empty lot there, I will probably build a new house for them.
I'm still playing around with my other lot options. I will definitely have a rental lot. I was originally planning to make it an agritourism center, with a B&B, animals, crops, etc. But I'm not sure that will work with the available lots, so depending on what we get, I may put my rental in the Bramblewoods instead.
I also really wanted to make an old village church that would be set as a museum, with local art and found objects, as well as a small library room and also an arch and seating to have weddings. If there's not an empty lot I can use for that, then I may have to revamp the park lot near the ruins. I will have to see. Bramblewood Chapel has a nice ring to it.
In general, I'm planning to evict all the premades, but not delete them. I like to leave them floating around the world, like I did with Sulani (and other worlds) because they will almost certain have the hidden trait to be HOB natives, so that means they will still hang out in the public spaces for the world, but I won't have to actively play them and I can coopt their homes! Then I just pretend they live in some of the shell buildings. That always makes the world feel more lively to me, given the small number of lots; otherwise the world ends up either empty or full of random tourists. But there's always the chance I will want to play one or two.
ETA: I took most of my surnames from a list I found online of obscure but ancient British surnames that have almost disappeared.
