Do the cats interact with the mice that are in the apartments?
I was getting ready to move a sim with a cat into one, but I want to first find out if the cats will interact with the mice, and possibly the roaches.

They should. I put a mouse hole in the Vatore home and their cat would sit in front of it waiting for the mouse, then when the mouse came out the cat tried to catch it.
I don't know if they'll interact with the roaches, though.
