I agree that time goes fast - just like in real life. Would be ok if the day was a tad longer, but then you can just make the year longer and get more days. So, it's probably tuned where it works pretty well on several accounts.
I normally focus on 2 or 3 household members, but the problem occurs when one of them will go to another lot. If so, I just follow that sim, ignoring the others. But - depending on activity - I might switch back and for a little. In TS3 a sim would keep reading even if you left that lot, but in TS4 I think they are busy with random activities once you return. So, if skills are not building, I don't bother much to arrange for their activities while I'm away. Talking of retail stores, I assume the store is running okay-ish even if you switch back home for a couple sim hours.
Alternatively you could bring another household member to that store, seat them in the back room to study whole your main sim works.
In a way I think it's fine that I could not accomplish everything I wanted during one simday, because that gives me a reason to play eagerly for one more day, and yet one more day... I play rotationally, so I normally don't accomplish much in each house anyway, lol.
