They could have some plants dormant during other seasons, not just winter -- for example if we have pumpkin plants they could be planted but not produce pumpkins till fall. Most fruit trees don't die (where they have to be replanted) in winter, they just go dormant. So I'd say that gardens will be fine, they just won't produce. If you're worried, set aside a secrion of your house as a conservatory or "greenhouse" of sorts (why we're getting the glass roofs) and put your most prized plants inside during the cold period -- you can move them in Build/Buy from the ground to a planter box or planter pot.

I truly believe it was confirmed that we'll get a Greenhouse, so I am thinking, maybe the plants will go into hibernation at least the ones that are outside and exposed to the weather!
I don't believe we're getting an actual greenhouse but with the glass roofs you can build your own or add a greenhouse room to your house. You can already grow plants indoors even without the glass roofs, if they're in a planter box (can hold up to 4 plants) or a planter pot (that can hold hold a single plant). Trees might be an issue; they can go into the planter pots but you have to make sure your walls are tall enough (at least the middle height).
