To finish level three of the Master Mixologist aspiration, you only need to get to level six of the mixologist career. If you earn enough aspiration points to get the Connections trait before you start, you would start out on level four of the career if you actually went into it. Then, it would plausibly take four days on the "Work Hard" setting to advance to level six of the career. This could be four days of selling drinks at the officer's club. Assuming you've completed the other objectives for that level, you'll then be on level four of the aspiration, which has no career requirements, so you can drop your mixology "career" like a hot potato.
If you want to match the official career more exactly, you could work Friday and Saturday from 6PM-2AM to represent level 4 of the career, then you can work Sunday and Monday from 2PM-10PM to represent level 5 of the career.
Now, how to get around undesirables crashing your officers club? I suggest redesigning it so that there are only two entrances. One will be an exclusive club door for your own club. The other will be an exclusive club door for a new club made up of the former residents.
