What a great thread. You got me thinking.
Ethnicity:
I guess I'm a white girl, but I have a mixed family background-am I the only one who is uncomfortable labeling anyone a color? Like, no matter what color... *shrugs*
I have mostly played Mexican sims though. I don't know where that comes from. It started in the Sims 1, I made a Mexican family (at least I decided that was their ethnicity) and the mother, who's name was was actually Sophia, just kept showing up in all my games. She has always been my main Sim. Next came along her sister Monica. Now, in the Sims 4, I have the two of them, but also many others and now that you mention it, very few of the sims I play are 'white'. I don't know why. I grew up as an army brat surrounded by all different ethinicities and cultures, maybe that's it? I love the differences in appearance of people from all over and I love the richness of family heritage.
For the first time since I have ever been playing the sims (since release) I finally made a sim of myself and she's also in the neighborhood. The only ones I have been disappointed in are in African American sims, I feel like they look like white people with dark skin. I'm just not good at getting their facial features right. I hope that makes sense.
Now, as far as stereotype, I don't think I use any, to me they are people with their own little personalities and they dress according to their interests and hobbies. I do like more ethnic styled hair for some of my African American sims but they don't all wear the same hairstyle.
I don't pair sims according to their ethnicity, I pair them according to how I think their personalities go together, and in the sims 4, I sort of play rotationally among several different houses and I like to get them to know each other and see how they get along.
I don't treat any of my sims differently due to their family history or racial background.
Sexuality:
I don't have any 'gay' sims in my game at the moment. I normally haven't' in the past. I like it when my sims make babies, I like to see the offspring grow into adults. To me, gay couples can't have a biological baby so I'm not interested in that-however, I am not opposed to it. If the game had a real story progression, I wouldn't mind gay couples but I wouldn't want them to overtake my game either. Now that we have brought it up though, I might have to see if any of my beloved sims in my neighborhood are interested in swinging that way :) If a suitable partner comes up, it may be an option.
Religion:
I think my sims should worship me :p I would love some kind of God Mode, worship the plumbob thing or something, I dunno. I have never really given my sims and religious identity. I'm not sure there is a place for it officially in the game-not real world religion anyhow. I do wish people would stop getting hung up on holidays though. We need more reasons to celebrate and so do our sims.
As for morals and such, some of my sims do things like pre marital woo hoo and others do not, it just depends on their personalities.
