Ethnicity: I make and play both genders of all races. I am a rotational player, so I play everyone :D I have Sims marry whoever I think is a good match, mixed race happens more often than not.
Sexuality: I have straight, gay and lesbian Sims. I usually decide when a Sim ages up to a teenager what their sexual preference will be. I use a dice so I have no influence over it. (Although there has been a rare couple of times in TS2 when I overrode the dice decision because I wanted to carry genetics on of particular Sims). Same sex couples get married and adopt children in my games also.
Religion: I am not religious, so no religion is reflected in my game.
I don't impose any personal or cultural ideals on my Sims, as I like a broad range of personalities and ethnicity in my games. It would be ultra boring if they were all similar to me :p But I suppose in having no religion in my game, I am sort of imposing that on them by omitting it.
