Ethnicity: I don't think about those sorts of things. I may decide I want an African, Asian, or whatever else sim, but I don't ever actually associate them with that in a cultural manner. I make whatever I feel like at the time, and it comes out however it comes out. I give them personalities based on them and how they grow, and not on their ethnicity or possible culture. To be honest, it seems like it would be more fun if I did. It would be far more interesting.
I don't intentionally avoid sims of certain races, but when it comes to females, I love pale skin way too much and I always end up going for those with it. Makes my legacy genetics pretty boring, and I miss out on cute darker ladies. Men I don't really care.
Sexuality: I don't think about it. I don't actively play gay men for some reason (likely because I'm just not interested in male sims in general, there's immensely boring), but I do have straight and lesbian couples all the time. Usually more straight couples. I generally have men initiate the romantic interactions in straight relationships, and I do not assign masuline/feminine roles to my sims - I just go off of whether or not the sim would do whatever interaction.
Religion: I don't have religion in my game because I personally highly dislike religion (In a "there's no way in plum I want it in my life but I don't care if others do" way). I jokingly refer to myself as "SimGod" in my legacy posts, but that's because I'm kind of, y'know, controlling everything they do. Lol.
