a "24 hour" plant doesn't mean you'll get the maximum harvest in 24 hours, it's just a rough estimate of the time the plant takes to start producing harvestables. It takes a fraction of that time for the plant to produce more harvestables afterwards.
As for there being any sort of visual queue, I think looking at the plants is supposed to give you an idea. The maximum you can ever harvest is 10.
