No aspect of the weddings are mandatory with the new pack, you choose which will be used in the weddings you set up, and which you will not.

For the roles, gender does not matter, so you can have a girl, a boy, or a non-binary individual be the ring bearer. Unfortunately, hobbits are not available in the game for it though.
