It usually depends on my sims and their personality. I have a few different wedding venues scattered around the worlds, and I chose the venue that most fits their personality. If I think they would like a big wedding or a formal wedding, I take them to my formal wedding lot. If they have more of a rustic vibe, I'll give them a rustic vibe. If I just don't feel like dealing with everything I just have them elope.
