I don't pay much attention to how they walk, but I do try to give them a gradual change when aging from A to E. A couple years before the elderly birthday I'll add the pepper hair tone (for black and brown hair, I wish there were pepper versions for red and blond hair, too!). Males with a beard may get a grey beard/moustache while hair is normal or pepper version. In RL beard and hair will not necessarily turn grey the same year.
I also give the Elders glasses, unless my on-the-side dna string suggests the sim will never need glasses. I'll add wrinkles, and females will normally tone down their make-up when getting closer to E stage, A few will get more makeup heavy though, and it adds to make uniqueness.
I also adjust their clothes, especially making shirts longer as they age. If there is an elderly woman wearing mini shirt, she should also be eccentric or have a makeup dedication.
I might wait with the grey hair until they have been elders for a couple years. A few females (and males?) dye their hair as elders - actually making them look even older, but don't tell them ;) Differency is good.
So there are ways to avoid the A-turns-E overnight :)
