I just cancelled Winterfest

You don't have to do all the things in that list to get a happy moodlet and aspiration reward from the holiday. Just a couple generally is enough, especially if you do the ones which the specific Sim has a "heart" over in the list. You know you've done as much as they need to when the whole bar for it gets a gold overlay.
I just had "The Festival of Arts" in my game and both of my active sims got what they consider a "great holiday" from just doing 2 of the things in the list.

Also, if you really just don't want to do them, you can delete most of the default holidays completely and they will never show up again. Or edit them so that big list of stuff to do has only things which you want it to have.

If you aren't going to do a holiday, I recommend just deleting it so it never comes up again, because sims get negative moodlets if you leave them on and don't do any of the stuff. Worst case scenario is you change your mind and add them back using the button to Add a Holiday.

The best way I found to deal with holidays when I don't feel like celebrating them is to have a lot somewhere in the world which you can just visit to celebrate the holiday.

And I also use a mod which prevents them getting a sad moodlet if you cancel the holiday.

Also, if you aren't going to celebrate one holiday with a household you could switch to another household for the purpose of celebrating that particular holiday.

I was hesitant about buying seasons, but I have really fallen in love with the way the world changes.

For any that you can't edit, you can still just trash can them completely and then add them back yourself. Ones you add yourself can always be edited.

I delete holidays all the time. I let the the negative moodlet happen. I kind of play it off like not everyone has the greatest winterfest or harvestfest ever. Maybe next year they will have a better time and meet the goals. Sometimes I do like @Stormkeep says and I edit them to fit my liking. I play a lot of single sim households and sometimes I don't want to bother or I'm too busy doing other things with them. Or I plumb forget.

Nice idea. I have just started creating some community lots. I am a bit lazy when it comes to building so I have been putting it off, but I reckon I could swap a holiday pub in and out.

You could give them small traditions, some things that you know you are going to do anyway. If you rummage through the attic box it fulfils the decorate tradition, you get some free items that you can keep or sell on. Share holiday spirit, doesn't require any decorations, only need to sing.

What I do when I don't want to celebrate is edit the holiday so there is just one easy task like decorate, because my house is usually seasonally decorated anyway. That way I still get the reward, which is usually a few hundred aspiration points, because I think if you just cancel it you get an "awful holiday" response.

I have all of the major packs, and if I could only keep just one, it would be Seasons. It just adds so much to gameplay

I think I agree with you here. I would hate to lose Get Together (and Eco-Living). I love Windenburg. It meshes with Seasons beautifully. Indeed, my favourite worlds are the base game worlds and Windenburg. If I was forced to choose, tho - I would keep Seasons. It alters the game so dramatically.
