Yeah, for a game based on "emotion", how Sims react to jealousy, death, anger, cheating (pretty much any emotion outside of happy) is a bit lackluster IMO. As someone else mentioned, TS2 really did it best with the cheating. They had that fury meter too, so don't even think about trying to have a friendly conversation. They would come to your house, steal the newspaper, kick over the trashcan, literally everyday until the relationship got repaired.
In TS4, I've had a few situations where my Sim reacted over jealousy & slapped them. Always cool to see as it's not consistent. I see this type of reaction more so with Sims I'm not playing. Example, my Sim was on a date. I didn't realize her romantic partner (Alexander Goth) was nearby. Granted, I wasn't playing Alexander Goth, and he just walked over to my Sim and did the classic double smack down.
But I'd love to see an overhaul on these reactions. Hopefully, the dev team is looking into it.
