There are some interesting ideas in your original post. I can't say good, because I didn't love being pregnant IRL (and somewhere around month seven I couldn't wait for it to be over - just like the moodlet says), and it's an area of reality I'm perfectly happy with Sims not emulating more accurately.
However, the part I quoted and emphasized above... IRL, pregnancy actually is fairly regular in terms of length. 280 days is the normal length of development, presuming there are no complications - and there are already mods to deal with those complications. The variable come in knowing when the pregnancy actually started, which perhaps the sims could simulate a little better. And yes, the length of labor itself could be more variable as well.
But the Trimesters being predictable... that's pretty true to life.
