Medieval dance is quite different to the dances done at classical music balls with poofy gowns.
Medieval dance tends to be quite hoppy, and not quite what most people imagine it to be.
Balls with big poofy gowns are usually associated with the waltz, which came in the early 1800's, but didn't gain huge popularity instantly. It changed the dance style from being in a group, or side by side with your partner, to facing each other in an intimate embrace. How scandalous!
Between the the middle ages and the late 1800's, the English Country dances were what was danced in England, America, and Australia. Less hoppy than the medieval dances, but not as intimate as the Waltz. Technically they're a renaissance style of dance, but not what most of the nobles were doing.
