I hope this is just a mod conflict or bug, but because as you said, OP, simply refusing something because of a dislike isn't always possible in real life. I have a strong dislike for cleaning, but despite this my actual cleaning skill is above average.
So far I have had only positive experiences with dislikes. When my sims were on a mountain excursion once, I had one sim who actively disliked climbing. He had learned it from books, thinking "it may not be as bad as I think", but then it really was as bad as he'd thought. He managed one climb with the tense moodlet dominating, during the other two he was Very Focused from heavy talking to by his friends (cheer up, compliment and the focus interaction from wellness skill) and eating emotion berries. His fun bar was depleted in the end, but he had conquered that mountain!
Another time my cooking enthusiast fell ill just when a large batch of canning had to be done. Three other sims hated cooking, but it had to be done. So they took turns doing the hated work. Meanwhile a fourth sim was neutral towards canning/cooking and worked all the time... but he also broke the stove.
