Thing is, you should first ask yourself what your sims' priority is: finish college fast or get the full college experience. If you want to finish it relatively fast but still have some breathing room, I would suggest squeezing three classes and one extracurricular at most. This way, you only have to stay for four semesters before graduating. If you don't mind sticking around a bit, I would suggest a two class-one extra curricular combo. It not only allows your sim time to build new relationships too, but it also ensures better academic performance because your sim is focusing their attention on less. Hope that helps!
