In early videeos I saw the setting offers only 3 fields per level ; male, female, neutral. So, I guess the countess' hubby will be count. In this game most things are not copying RL, because ie you could play a ducess marrying a woman if you like, so they would then both be titled duchess. Unless you adjust the female title to something else, of course. I think that in RL, in formal situations one will use "the" in front of the one who actually holds the peerage title "in their own right", so it could be The Countess Safira and Count Willy, and everyone would see that the Count was just married into it all. In the game we don't get help like this.
It is also for simplifying that all sons are titled lords, because in RL the oldest son of a higher ranked noble will normally be styled baron (while his brothers are lords), just to help ppl see who will be the next head, and give main heir a good push into society with a title that he might later inherit. In game I think only top level (lvl 10 only?) sons/daughters have a different title (prince/princess). And, I don't think we can adjust the children's titles, but lord/lady for all sounds good to me (except for the kids of lvl 10 (knight/dame I will not use titles at all).
