I've never married off any of my sims that didn't start married
(that not changing their last name thing is bugging me)
But I've still had several multi-generational families.
Usually if I think it's time to start the next generation, I just have the female sims have babies with their boyfriends.
It doesn't work for some stories as well as having the sims get married first. but it is an option if you're getting impatient for those sim-babies
