Try getting Creative Visionary reward, it helps a lot. Also, what I do is send my sim in the room where the easel is and leave her to paint at her own will - she usually is looking few seconds at the easel and start painting by herself. If the result is not a masterpiece, I simply sell the paint and she will start all over.
That's what I do in many cases, I keep only the masterpieces and sell the rest.
