Oh man, my Rags to Riches Sims do much more than just collect, harvest/garden and fish to make a living. Here are a few things they've done:
1. Painting
2. Sales Table (using their own or at the Flea Market)
3. Retail Store/Bakery/Art Gallery - I especially like doing a bakery or other food because they can just get the Lice Cold Freezer and sell all food/baked goods from that on a retail lot if they don't want to directly deal with customers and the food lasts longer. By the way, in case you didn't know, Sims can use a yard sale table as a 'fridge.' I love to have my R2R Sims pack festival food or townie leftovers into sack lunches and then put them in the yard sale inventory. They last for days that way and it's much cheaper than a full size or mini fridge. It's also good to store any plates of food they might grill themselves in parks too.
4. Hacking (under Programming)
5. Photography
6. Sing and/or play an instrument for tips
7. Tell jokes using a microphone
8. Breed frogs
9. Knitting (Plopsy - good for anything your Sim can make really)
10. Woodworking table
11. Dumpster Diving
12. Fizzy Juice
13. Fabrication
14. Candle Making
15. Writing Books
16. Writing Songs
17. Flower Arranging
18. Dog/Cat treats
I'm sure there's more, those are just a few ideas off the top of my head. Anything 'made' or stolen (kleptos) that would normally be sold from the inventory is sold using the sales table or by saving up doing something else first to get simoleans and then opening a retail store. That includes mounting any fish caught, keeping bred frogs, dog treats, herbal remedies, honey, etc.
