I'm not entirely sure of the point of your post, there's really no discussion point unless you want us all to share how we play with same sex couples and gender options. If you want to edit all your families to make them straight, then that's fine, it's your game!
In my main save, I personally have 9 lesbian couples, 3 gay couples, 3 transgender sims, 2 nonbinary sims, and a large handful of bisexual and pansexual sims (and even a few polyamorous sims). And many of them have children from adoption, using mods to simulate in vitro fertilization, or simply mixing their genetics in CAS, and I love the diversity that playing all these families provides in my game. A very large percentage of my households feature heterosexual sims as well, but I really love adding families of all sorts into my game
(Edit: Yes, I know, I have a disproportionately large number of lesbian couples lol, but as a lesbian, I find I enjoy making and playing lesbian couples, and since you can play the sims however you want, I just run with it. So really, just play your game how it makes you happy :))
