Seasons

There isn't much of a choice in this, all for seasons will be rotated. But saying that, there is a cheat that will allow you to stay in winter, also there is an object that is included in with Seasons that will tamper with the weather. Be careful with winter, there is a glitch at the moment that are killing sims. It hasn't happened to me yet, mainly because I haven't really play winter. But I did heard that they are aware of the issue, and is working on it.

You'll need to also get your sim's handiness skill up there to do the needed upgrade for it to change the weather. Not sure how many is needed though.

I don't believe there's an option to just play one season, but you can put the seasons on the 28 day setting and then when that finishes you could set it back to 7 day seasons until winter rolls around again. That would be the best way to do it I think.
