Your pilot would be the Helmsman and you could have them do dual duties. Think of Sulu in the original Star Trek. He was the Helmsman, but he was also a Botanist so he grew alien flowers. Create a deck with a Botany Lab and have your Helmsman work on plants, etc. Otherwise have him keep up on rocket science to fill his hours. We don't have a way for him to study the stars, but a Helmsman would know the stars since they have to navigate through them.
